Special Kebab Recipe!

Ingredients:

  • 500gr 50% pork - 50% beef mince
  • 1 tablespoon of condensed tomato juice
  • 1 tablespoon of Greek yoghurt
  • 2/3 tablespoon of cummin
  • 1 tablespoon of ground paprika
  • 1 teaspoon of ground garlic
  • 1.5 tablespoons of oregano
  • 1.5 tablespoons of thyme

Execution

The execution of this recipe is rather simple. Just put all of the ingredients together in a large bowl and knead until the meat looks like putty. Kebabs taste correct when they are kneaded much more extensively than standard patties. You want them to have a really uniform look and feel when they are done.

After you are finished masing the ingredients separate the meat into four to five equal sized patties. If you want the tradidional look shape them like cylinders rather than discs as you would for patties.

Finally just put the patties on a frying pan (with no added oil) and roast them until they are crunchy on the outside but still soft on the inside. I usually aim for medium well to well done (due to the pork) but keep in mind that it is hard to tell because of the coloration from the tomato juice. So a bit of trial and error is expected. As a good starting point I would suggest roasting for about 15' total on the second or third highest level of your stovetop.
